  • 6 slices of day-old bread

  • 1 cup shredded Emmental cheese

 Directions:

  1. Place the butter, onions, and salt in a Dutch-oven and cook the mixture over low heat, stirring frequently, until the onions are dark brown and carmelized, 40 minutes to 1 hour.
  2. Deglaze the pot with the orange juice and sherry, using a wooden spoon to scrape any browned bits from the bottom of the pot. Add the thyme, stock, garlic, and pepper to raise the heat to medium and bring to a simmer. Simmer for 1 hour.
  3. While the soup is simmering, preheat the oven to 450F.
  4. After 1 hour, ladle the soup into oven-safe crocks or bowls and place a slice of bred on top of each portion. Sprinkle the cheese over each portion, place the crocks into the oven, and bake until the cheese begins to brown, about 10 minutes. Carefully remove the bowls from the oven and let the soup cool for 10 minutes before serving.
